May 7th is National Roast Leg of Lamb Day

Tomorrow is National Roast Leg of Lamb Day, with that being said here are some link to, what I think are some great lamb recipes.

Which ever recipe you may choose, keep in mind we carry marinades, rubs and seasonings that go great with lamb you can find them at Big Tony's . My favorite rub to use on lamb is the It's Perfect Honey Dry Rub the sweetness goes great with the flavor of lamb, all you have to do is rub it in and let the lamb rest on the counter for about 30 minutes prior to roasting. The honey will give the lamb a sweet but not over power crust. Or if you like your food spicy, you can try Rio in Your Backyard with this rub, it will take your lamb to the next level. Do the same as above rub it in and let sit out for about 30 minutes,

We also have a couple of mustard's that are awesome on roasted lamb, just cover and roast and you will be pleasantly surprised with the results.

The Story Of Wood Chips

I'd like to take a few minutes and talk about the different types of smoking wood chips. We carry MR. BBQ wood chips in our store.
  • Alder is commonly used with fish, but you can also use it for beef and pork. It's light and has a slight sweetness to it. It provides a delicate flavor to your food.
  • Apple has a light, fruity and sweet aroma. To be used with pork and poultry for best results.
  • Cherry slight red color and subtle sweet fruity flavor. Can be used with beef, pork or poultry.
  • Hickory strong flavor are the norm for this smoking wood. It complements all meats. Easily the most popular smoke wood used in BBQ
  • Mesquite Often burned down to coals before being used as heat source. It strong smoke wood and can easily over power your food. It can be used with beef, pork, poultry and seafood.
  • Pecan spicy and nutty is the way the flavor of pecan can be described. Great with pork, beef or poultry.
You can always mix and match the woods to create even more flavor. The best combo are:
  • Apple + Cherry
  • Apple + Hickory
  • Cherry + Pecan
  • Cherry + Mesquite
  • Apple + Cherry + Pecan
Soak your wood chips in water at least a few hour prior to using if not overnight. What I like to do at this point is add other flavor to the wood chips. Instead of using just plain water you can use whiskey, apple juice, hot sauce and other liquids let your imagination run wild.


Keep in mind, you could use too many wood chips in your BBQ and overpower you meat. Depending on what you are cooking, I would start with half a bag of wood chips and then add to it as necessary.

What should I eat, a burger, a hot dog or a chicken breast?


Some prefer hot dogs while others prefer hamburger. The more sophisticated of the bunch want chicken. When you are at a barbeque, and not trying to pick up on women, you want to have a good piece of meat. Depending on your mood, you may even go with two types of meat just to be safe. The debate is a lengthy one, but it still begs the question. “Which is better?”

 

A hot dog is traditional and reminds us all of the time we went to the ball park with our dads and getting a hot dog which we later regurgitated due to the massive size of it. We have a memory that makes it great. A hamburger is going to bring us back to the days when we were young and hamburgers were the best around. A piece of chicken is going to remind us of our mom’s home cooking. Whatever you pallet is saying, you’re going to have to go with. However, you don’t want to choose unwisely. If you do, you are going to regret it later.

 

Whenever we are at a barbecue, we struggle to know which is best. Pay attention to the person on the grill. If he doesn’t season the hamburger or the chicken to your preference, you are going to have to go with the hot dog. You know you are always going to win with a hot dog. If the person on the grill seasons the meats to perfection, you have to choose on the messy factor. If there are forks and knives, you have nothing to fear about the chicken, but if there are none, your best bet is to go with the hamburger. There are many factors when choosing the best meat for your pallet. It all goes to show that if you are in the mood for it, go for it.

As long as they are using Big Tony's Seasonings on the hamburger or chicken that's what, I would eat.

Grilling in the summer is pure heaven






As a grill master, I pride myself on my meat. Whenever I have the chance I take out the grill, have some friends and family over, and enjoy cooking an assortment of meats. Although grilling is not for everyone, just talk to my cousin Mike. He once grilled a piece of hamburger meat so bad it looked darker than Snooki’s tan! However, there are tricks to it and you eventually will learn them. However, to properly grill, you need to be outside where it is nice and hot.

 

Grilling in the summer is heaven because you have the sun beating down on your skin as you pray that you wore enough SPF 35. You can watch the children run around with a stick praying that they don’t trip and you will have to spend the day in the emergency room. You always have that one friend that wants to brag about how much better of a grill master he is and you simply want to throw the spatula at him and have him cook your meats. All of these add up to the perfect time in the summer because in the end, the best thing about summer is having that cold beer.

 

Grilling takes skill and you have to make sure that the meat is perfect. If you have learned how to cook your meat properly, you are in the running to becoming a grill master to your family. Make sure that the heat is not on too high otherwise you are going to cook it too quickly and they will turn out dry as a bone. You want just the right amount of heat to bring out the juices. You don’t need a fancy grill to cook your meat the right way. With the proper technique, anyone can grill to perfection.
